Focaccia sandwich, tuna belly, artichokes, tomato sauce, basil, and Parmesan
Ingredients
1 Focaccia Bread
Sun-dried tomatoes
Pickled artichokes
Tuna belly
Tomato concentrate
Parmesan
Basil
Fresh spinach
Thyme
Instructions
Prepare a "tomato sauce" cold
In a bowl, mix 2-3 spoons of tomato concentrate, 2 tablespoons of olive oil, thyme or rosemary, a light drizzle of lemon juice, 2 chopped basil leaves, and the bottom of a glass of water (very little water, just to liquefy the mixture slightly), salt and pepper.
Spread the sauce on your oven and bake for 3 to 5 min at 180 °C
Grate Parmesan shavings
Add the sun-dried tomatoes, artichokes, some fresh spinach leaves, tuna belly, fresh basil leaves, Parmesan cheese, a drizzle of olive oil, and a little lemon juice to the bread.
