SEA BREAM CEVICHE




Imagine, in the middle of August, on a boat in Corsica, a beautiful sun, good music, you just come out of the water and there you are hungry, very hungry. You need something fresh and light because it’s hot. It’s the perfect dish! What’s better than eating fresh fish at sea, with a juicy and tasty citrus marinade? I tell you no more, you understood very well!


Ingredients

  • 2 sets of sea bream (straight from the fishmonger’s shelf)

  • 1 bunch of fresh parsley

  • Olive oil

  • Lime

  • Lemon

  • Shallots

  • Jalapeños (Optional)

Instructions

  1. Chop the parsley

  2. Make a fine shallot brunoise (small dices)

  3. Pour into a bowl 1/3 of olive oil for 2/3 of yellow lemon

  4. Add the shallots and parsley

  5. Finely cut the bream fillets (between carpaccio and sashimi cut)

  6. Pour in the marinade 10-15 minutes before tasting

  7. Enjoy!
