Noodles & Shrimp Broth, Fresh Cilantro
Ingredients
Shiitake mushroom
Celery
Coriander
Shrimp
Citronella
Ginger
1 Red onion
Sesame oil
oyster sauce
Sriracha sauce
Sweet chili sauce
Star anise
Cayenne chili pepper
Instructions
Fry the carcasses of your shrimp in sesame oil with finely chopped ginger with sliced onion.
Add the lemongrass cut transversely, the celery cut coarsely with the leaves, and the cilantro crushed by hand.
Let it sweat, then deglaze with a mixture consisting of a teaspoon of oyster sauce, 6 tablespoons of soy sauce, a tablespoon of sweet chili, and 1/2 glass of water.
Allow coming back with a lid
When the preparation has reduced, add hot water as in the photos and add the star anise as well as the cayenne pepper then leave on low heat.
Remove everything to keep only the broth to cook the noodles in.
When the noodles are cooked, add your shrimp and fresh cilantro, and enjoy!
Ps : The little tip is to add sesame seeds for the taste and especially the visual;)
